This site will contain backports of SELinux-enabled packages for Debian sarge, so you can combine the security benefits of Debian stable with those of SELinux.

deb http://selinux.alioth.debian.org/sesarge ./ should work as apt-get source URL once the repository is complete.
To install the SESarge backports, use a pin like this in /etc/apt/preferences:
Package: *
Pin: release o=selinux.alioth.debian.org
Pin-Priority: 991
In addition, you should set APT::Default-Release "stable";,
e.g. by putting it into /etc/apt/apt.conf.d/10defaultrelease
